120 Complet USA Rubicone is a powder base for artisan gelato, vegan and dairy-free; complete with vegetable fats and proteins.
Already complete with vegetable fats and proteins, it is prepared with milk and sugar: 120 g per litre gives a structured fior di latte that holds in the display case.
Ideal for: cream gelato and fior di latte to customise in the gelato lab.
Features: vegan, dairy-free, gluten-free, Halal certified, Kosher certified.
Directions: dissolve base and sugar in the milk, pasteurise and batch-freeze.
Dosage: 120 g of base and 230 g of sugar per 1 L of milk.
Processing: hot.
