Creamy Fruit Milk Free Pregel is a dairy-free fruit base for artisan gelato, with a neutral taste.
It is designed for a very creamy gelato or sorbet with high overrun: it enhances fresh fruit and gives a soft, stable structure in the display, with no fat.
Ideal for: creamy sorbets and fruit gelato, vegan displays.
Features: high overrun, fat-free, dairy-free, vegan, gluten-free.
Directions: combine the base with water and fruit, blend and batch-freeze.
Dosage: 50 g per 1 litre of water, plus the fruit.
Processing: cold.
