DESCRIPTION AND SUGGESTIONS
Lea Frutt 50 Leagel is a fruit base for artisan gelato with coconut fat and milk proteins, giving fruit gelato a full-bodied, scoopable texture.
It is used at 35 g per kg with fresh fruit or pastes.
Ideal for: creamy fruit gelato: strawberry, banana, peach.
Features: flavour: lemon, coconut vegetable fat, gluten-free.
Directions: dissolve base and sugar in water and fruit and batch-freeze.
Dosage: 35 g per kg of mix.
Processing: hot, at 85 °C or cold.
