DESCRIPTION AND SUGGESTIONS
Fruit 50 Martini Gelato is a fat-free powder base, used cold, for delicious, very creamy fruit sorbets.
With fresh fruit and a little paste it gives stable sorbets with no syneresis, meaning no water separation in the pan.
Ideal for: fresh fruit sorbets and vegan menus.
Features: gluten-free, vegan, no hydrogenated fats, Halal and Kosher certified.
Directions: blend base and sugar, add to the water with fruit or paste, blend and batch-freeze.
Dosage: 325 g of non-warm water + 30 g of base + 210 g of sugar + 35 g of strawberry paste + 400 g of fresh strawberries.
Processing: cold.
