DESCRIPTION AND SUGGESTIONS
Vegetalfruit 50 Rubicone is a powder base for artisan gelato, vegan and dairy-free, for structured sorbets with enhanced flavours and no dripping.
At 50 g per litre it gives structured sorbets with enhanced flavours and prevents dripping, even in summer cones. It is processed cold, with sugar and water added.
Ideal for: sorbets and fruit gelato in the gelato lab.
Features: vegan, dairy-free, gluten-free, Halal certified, Kosher certified.
Directions: dissolve base and sugar in the water and batch-freeze.
Dosage: 50 g per 1 L of water.
Processing: cold.
