At 50 g per litre of milk, with 230 g of sugar, it gives a gelato with a delicate milk taste and a creamy, resilient structure.

Ideal for: cream gelato and fior di latte to customise in the gelato lab.

Features: gluten-free, Halal certified, Kosher certified.

Directions: dissolve base and sugar in the milk, pasteurise and batch-freeze.

Dosage: 50 g of base and 230 g of sugar per 1 L of milk.

Processing: hot or cold.
