DESCRIPTION AND SUGGESTIONS
Vegetalfruit 70 Rubicone is a powder base for artisan gelato, vegan and dairy-free, for creamy sorbets that keep perfectly in the display cabinet.
At 70 g per litre it gives scoopable, creamy sorbets and improves their display life over time. A complete mix for velvety fruit sorbets, processed cold.
Ideal for: sorbets and fruit gelato in the gelato lab.
Features: vegan, dairy-free, gluten-free, Halal certified, Kosher certified.
Directions: dissolve base and sugar in the water and batch-freeze.
Dosage: 70 g per kg of mix.
Processing: cold.
