DESCRIPTION AND SUGGESTIONS

Olive Oil Improver Leagel is a fully vegan product made from olive oil with its bitterness removed and a light vanilla taste. It adds structure to all gelato and is recommended for all vegan preparations.

It replaces traditional fats and adds creaminess; the vanilla note makes it suitable for cream and vegan flavours.

Ideal for: vegan gelato, sorbets and soya and rice bases.

Features: flavour: vanilla, fats: vegetable from oliva, vegan, gluten-free.

Directions: add it to the base mix and batch-freeze.

Dosage: 30-60 g per kg of mix.

Processing: cold.
