DESCRIPTION AND SUGGESTIONS
Cassata Citrus Gelato Paste Leagel is made with candied fruit and citrus and recreates the taste of the typical Sicilian dessert.
Use it on a ricotta or cream base and finish with chocolate chips and pistachio. At 100 g per kg the taste is full and recognisable.
Ideal for: cassata gelato, ricotta and candied fruit.
Recommended pairings: ricotta, pistachio, dark chocolate and candied fruit.
Features: gluten-free.
Directions: add the paste to the white base, mix well and batch-freeze.
Dosage: 100 g per kg of mix.
