Cassata Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with the taste of traditional Sicilian cassata, with a rich, sweet and aromatic profile, with delicate pastry and candied fruit notes.

Candied fruit, ricotta and citrus notes recreate Sicilian cassata; at 80 - 110 g per kg the taste is full and it is finished with chocolate chips and pistachio.

Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.

Directions: add the paste to the base, mix well and batch-freeze.

Dosage: 80 - 110 g per kg of mix.
