It is used at 50 g per kg and is perfect with candied fruit, chocolate and pistachio for Sicilian classics.

Ideal for: ricotta gelato, cassata and cannoli flavours.

Suggested flavours: cassata, cannoli, ricotta and pear.

Directions: add to the white mix and churn.

Dosage: 50 g per kg of mix; in pastry 50-100 g per kg.
