Strawberry 40 Pastry Paste Leagel is a concentrated strawberry paste with 28% strawberries, designed to flavour whipped cream, semifreddi, bavarois and mousses and all pastry preparations, as well as artisan gelato.
It is used at 40 g per kg and is perfect for cakes and single portions, as well as gelato.
Ideal for: strawberry bavarois and mousses, cakes and semifreddi.
Features: gluten-free.
Directions: fold the paste into whipped cream, mousse or semifreddo.
Dosage: 40 g per kg of mix.
