DESCRIPTION AND SUGGESTIONS
Strawberry Gelato Paste Rubicone is a concentrated fruit paste for artisan gelato with a sweet, natural strawberry taste, with a sweet, fragrant and lightly tangy profile.
Strawberry gives a red, fragrant, slightly tangy sorbet; it is also used to boost the taste of gelato made with fresh strawberries.
Ideal for: fruit gelato and sorbets in the display, sundaes and semifreddi, in gelato shops and pastry labs.
Features: vegan, dairy-free, gluten-free, Halal certified, Kosher certified.
Directions: add the paste to the base, mix well and batch-freeze.
Dosage: 65 g per kg of mix.
