Spray-dried Skimmed Milk Powder Rubicone is a technical ingredient for artisan gelato: skimmed milk powder that increases the solids content in milk bases.

Perfectly soluble skimmed milk powder: it raises the milk solids in bases and gives a fuller-bodied gelato without adding fat. It raises the protein level of gelato bases.

Ideal for: balancing and customising mixes in the gelato lab.

Features: gluten-free.

Directions: add to the base mix at the stated dosage and batch-freeze.
