DESCRIPTION AND SUGGESTIONS
Mixed Berry Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with a mixed berry taste, with an intense, fruity and pleasantly tangy profile.
Berries give a purple, intense, tangy sorbet; at 65 - 80 g per kg they are also used on a yogurt base.
Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.
Features: vegan, dairy-free, gluten-free, Halal certified, Kosher certified.
Directions: add the paste to the base, mix well and batch-freeze.
Dosage: 65 - 80 g per kg of mix.
