DESCRIPTION AND SUGGESTIONS
Cookie Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with the taste of shortbread biscuit, with a sweet, buttery and fragrant profile, with notes of freshly baked pastry.
Shortbread gives a buttery, fragrant gelato; finish it with crumbled chocolate cookies for a cookies flavour.
Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.
Features: vegan, dairy-free, gluten-free, Halal certified.
Directions: add the paste to the base, mix well and batch-freeze.
Dosage: 40 g per kg of mix.
