DESCRIPTION AND SUGGESTIONS
Shortbread Gelato Paste - Cookies Toschi is a yellow paste for making indulgent biscuit-flavoured gelato, reminiscent of freshly baked shortbread.
Biscuit is one of the flavours families ask for most: finish it with crumbled biscuits or crumble during batch-freezing, and pair it with caramel, chocolate or hazelnut variegates.
Ideal for: biscuit gelato, semifreddi, crumble sundaes and gelato cakes.
Features: shortbread flavour, yellow colour, added to the pasteurised base.
Directions: add the paste to the ready white base, mix well, leave for 30 minutes and batch-freeze.
Dosage: 50 g of paste per 1 kg of base mix.
