DESCRIPTION AND SUGGESTIONS
Cremosette Almond Leagel is a spreadable filling cream for fine pastry, tasting of delicate almond.
Cremosette Almond is bake-stable and can fill tarts halfway through baking; brought to 35 °C it can also be used as a glaze on semifreddi. A high-quality cream, it also flavours mousses and bavarois.
Ideal for: tarts, frangipane and single portions.
Features: fills, glazes and flavours, bake-stable, gluten-free.
Directions: fill before or after baking; to glaze, warm to 35 °C.
Dosage: to taste; to flavour cream and custards about 250 g per kg.
