Gelobase 100 Rubicone is a powder base for artisan gelato with high-quality, functional ingredients, for a creamy, structured gelato.
Premium, functional ingredients give a tall, creamy gelato: 100 g of base and 240 g of sugar per litre of milk.
Ideal for: cream gelato and fior di latte to customise in the gelato lab.
Features: gluten-free, Halal certified, Kosher certified.
Directions: dissolve base and sugar in the milk, pasteurise and batch-freeze.
Dosage: 100 g of base and 240 g of sugar per 1 L of milk.
Processing: hot.
