DESCRIPTION AND SUGGESTIONS
Fiordilatte 100 C/F Rubicone is a powder base for a creamy, structured artisan gelato with a fior di latte flavour.
With 100 g of base and 240 g of sugar per litre of milk it gives a creamy, structured fior di latte, hot or cold process.
Ideal for: cream gelato and fior di latte to customise in the gelato lab.
Features: gluten-free, Halal certified, Kosher certified.
Directions: dissolve base and sugar in the milk, pasteurise and batch-freeze.
Dosage: 100 g of base and 240 g of sugar per 1 L of milk.
Processing: hot or cold.
