Gelato Improver Integra Base 20-50 Rubicone is a technical ingredient for artisan gelato, vegan and dairy-free: a mix of reducing sugars, emulsifiers and fibres for milk bases.
Reducing sugars, emulsifiers and fibre specifically for milk bases: 20 to 50 g per litre improve structure, scoopability and display life.
Ideal for: balancing and customising mixes in the gelato lab.

Directions: add to the base mix at the stated dosage and batch-freeze.
