DESCRIPTION AND SUGGESTIONS
Lemon 50 Leagel is a lemon-flavoured fruit base for artisan gelato that brings out the freshness of the citrus and gives gelato a full-bodied, scoopable texture. It also works for sorbets.
The lemon is already in the base: at 35 g per kg you get a lemon sorbet, or a fruit base to enrich with fresh fruit and pastes.
Ideal for: lemon sorbet, lemon gelato and citrus sundaes.
Features: flavour: lemon, fat-free, gluten-free.
Directions: dissolve base and sugar in water and fruit and batch-freeze.
Dosage: 35 g per kg of mix.
Processing: hot, at 85 °C or cold.
