Crema Catalana Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with the taste of traditional crema catalana, with a sweet, creamy and delicately spiced profile, with caramelised sugar notes.

Egg custard and caramelised sugar recreate the Spanish dessert; finish it with burnt sugar crumble or caramel sauce.

Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.

Directions: add the paste to the base, mix well and batch-freeze.
