DESCRIPTION AND SUGGESTIONS

Royal 50 C/F Leagel is a fat-free milk base for artisan gelato with milk and cream flavour, leaving the gelato maker full freedom over cream and pastes. Hot or cold process.

The dosage is 35 g per kg.

Ideal for: cream, chocolate and nut flavours.

Features: flavour: milk, cream, fat-free, gluten-free.

Directions: dissolve base and sugar in milk and batch-freeze, with or without pasteurising.

Dosage: 35 g per kg of mix.

Processing: hot, at 85 °C or cold.
