Raspberry Mirror Glaze stays glossy even at sub-zero temperatures, so the cake keeps its look until it is served; it spreads well even on single portions and unusual moulds.

Ideal for: fruit gelato cakes, cheesecakes and semifreddi.

Directions: heat to 45-50 °C, pour over the well-chilled cake, blast-chill and decorate.
