DESCRIPTION AND SUGGESTIONS
Melon Gelato Paste Rubicone is a concentrated fruit paste for artisan gelato with a sweet, natural melon taste, with a sweet, juicy and delicately aromatic profile.
Melon gives a sweet, fragrant summer sorbet; it pairs with mint, lemon and exotic fruits.
Ideal for: fruit gelato and sorbets in the display, sundaes and semifreddi, in gelato shops and pastry labs.
Features: vegan, dairy-free, gluten-free, Halal certified, Kosher certified.
Directions: add the paste to the base, mix well and batch-freeze.
Dosage: 65 g per kg of mix.
