DESCRIPTION AND SUGGESTIONS
Pomegranate Gelato Paste Rubicone is a concentrated fruit paste for artisan gelato with an intense and natural pomegranate taste, with a fruity, vibrant and delicately tannic profile.
Pomegranate gives a lively, slightly sharp ruby-red sorbet; it pairs with yogurt, orange and white chocolate.
Ideal for: fruit gelato and sorbets in the display, sundaes and semifreddi, in gelato shops and pastry labs.
Features: vegan, dairy-free, gluten-free, Halal certified, Kosher certified.
Directions: add the paste to the base, mix well and batch-freeze.
Dosage: 65 - 80 g per kg of mix.
