DESCRIPTION AND SUGGESTIONS
Lemon Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with a fresh, natural lemon taste, with a citrusy, fresh and intensely fragrant profile.
Lemon gives a citrusy, intensely fragrant sorbet; it is also used to boost the taste of sorbets made with fresh lemon juice.
Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.
Features: vegan, dairy-free, gluten-free, Halal certified, Kosher certified.
Directions: add the paste to the base, mix well and batch-freeze.
Dosage: 65 g per kg of mix.
