DESCRIPTION AND SUGGESTIONS
Malaga Gelato Paste Martini is a paste for artisan gelato with 30% sultanas and Marsala wine, for one of gelato's great classics.
Soft raisins and the fortified note of Marsala give Malaga its unmistakable character, loved by adult customers and in the colder seasons. With 30% sultanas and Marsala wine, it creates a gelato shop classic.
Ideal for: Malaga flavour, cups and semifreddo.
Features: gluten-free, vegan, no hydrogenated fats, no emulsifiers.
Directions: add the paste to the base mix, stir well and batch-freeze.
Dosage: 80-100 g per kg of mix.
