DESCRIPTION AND SUGGESTIONS

Elenka’s Pancotta Paste is used in gelato and pastry for the taste of panna cotta.

Ideal for gelato, creams and an easy panna cotta mousse.

DOSAGE
Gelato: 50 g per 1000 g of base mix.
Pastry: 50 g per 1000 g of custard or cream.
Mousse: 1000 g of milk + 100 g of starch + 50 g of Pancotta; cook and fill the moulds.
