Burnt Caramel Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with the bold taste of burnt caramel, with an intense, toasted and pleasantly bitter profile, with deep notes of cooked sugar.

Burnt caramel has a bitter note that sets it apart from classic caramel: suited to grown-up flavours, it pairs with dark chocolate, hazelnut and salt; being vegan it also works on water-based mixes.

Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.
