Salted Butter Caramel Gelato Paste Toschi is for making innovative salted butter caramel gelato, combining the sweetness of caramel with a pleasant savoury note.
Salted butter caramel is one of the most popular modern flavours: the savoury note makes the gelato less cloying and pairs it well with dark chocolate, peanuts, apple and biscuit.
Ideal for: salted caramel gelato, semifreddi, flavoured pastry cream and pralines.
Features: caramel flavour with a savoury salted butter note.
Directions: add the paste to the ready white base, mix well, leave for 30 minutes and batch-freeze.
Dosage: 80-100 g of paste per 1 kg of base mix.
