DESCRIPTION AND SUGGESTIONS
Blue 83 Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with a vanilla taste.
Vanilla flavour with a bright blue colour gives the classic 'Smurf' gelato loved by children: just 30 g per kg gives a full colour.
Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.
Features: vegan, dairy-free, gluten-free, Kosher certified.
Directions: add the paste to the base, mix well and batch-freeze.
Dosage: 30 g per kg of mix.
