At 100 g per kg it gives a warm, winey custard; without raisins the gelato stays smooth and you can decide how much dried fruit to add, soaked in rum or Marsala.

Ideal for: smooth Malaga gelato and semifreddi.

Directions: add the paste to the white base, mix well and batch-freeze.
