DESCRIPTION AND SUGGESTIONS

Marron Glacè Gelato Paste Leagel is made with candied chestnuts, for a rich autumn gelato.

Candied chestnuts give a rich, velvety taste typical of Piedmontese and French pastry: an autumn and Christmas flavour, finished with chestnut pieces or dark chocolate. It goes into the white base before batch-freezing, using the cold process.

Ideal for: marron glacé gelato and autumn sundaes.

Features: gluten-free.

Directions: add the paste to the white base, mix well and batch-freeze.

Dosage: 80 g per kg of mix.
