Selecao - Premium Cocoa Blend 22-24 Leagel is a blend of fine cocoas with 22-24% cocoa butter, designed for full-flavoured chocolate gelato when added to the white mix.

From 50 to 100 g per kg on the white base you choose the intensity, from mild cocoa to extra dark.

Ideal for: chocolate gelato, cocoa sorbet and hot chocolate.

Features: gluten-free.

Directions: add it to the white mix, pasteurise and batch-freeze.

Dosage: 50-100 g per kg of mix.
