DESCRIPTION AND SUGGESTIONS
White Chocolate Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with the taste of white chocolate, with a creamy, sweet and delicately vanilla-like profile, with smooth notes of milk and cocoa.
White chocolate gives a creamy, sweet gelato, an ideal base for fruit, berry and pistachio variegates.
Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.
Features: gluten-free, Halal certified, Kosher certified.
Directions: add the paste to the base, mix well and batch-freeze.
Dosage: 65 g per kg of mix.
