Aymara Tutto Cioccolato Bianco Martini Gelato is a complete base rich in white chocolate powder, for artisan gelato with an enveloping taste.
It has exceptional creaminess and suits both cream and fruit variegates, from raspberry to passion fruit. It is Halal certified.
Ideal for: variegated white chocolate, gelato cakes and cups.
Features: gluten-free, no hydrogenated fats, Halal certified.
Directions: dissolve the base in boiling water with a stick blender, allow to cool and batch-freeze.
Dosage: 1.6 kg of product + 2.5 L of boiling water.
Processing: hot.
