This version of Nougat Gelato Paste Leagel is designed for gelato and pastry: hazelnuts, honey and egg white for nougat creams, mousses and semifreddi.
It recreates the taste of nougat; in gelato it pairs with Loveria Hazelnut in Torroncino Cremino.
Ideal for: nougat semifreddo, mousses and gelato.

Directions: add the paste to the white base, mix well and batch-freeze.
Dosage: 100 g per kg of mix.
