Sweet Almond Gelato Paste Leagel is made with 70% almonds, for a sweet, delicate gelato.

With 70% almonds it gives a pale, delicate gelato typical of Sicilian pastry: it pairs with sour cherry, chocolate and candied citrus and is used for frozen almond milk. Its processing is cold. Gluten-free.

Ideal for: almond gelato, frozen almond milk.

Features: 70% almonds, gluten-free.

Directions: add the paste to the white base, mix well and batch-freeze.

Dosage: 80 g per kg of mix.
