DESCRIPTION AND SUGGESTIONS
Almond Gelato Paste Toschi is a pure almond paste for an almond gelato with a delicate, natural taste, typical of Mediterranean tradition.
Almond gives a pale gelato with a delicate taste, typical of Sicilian pastry: it pairs with chocolate, sour cherry and candied citrus and is also used for semifreddi and almond milk.
Ideal for: almond gelato, semifreddi, frozen almond milk and pralines.
Features: pure almond paste, delicate flavour.
Directions: add the paste to the ready white base, mix well, leave for 30 minutes and batch-freeze.
Dosage: 80-100 g of paste per 1 kg of base mix.
