Alphonso Mango Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with an Alphonso mango taste, with a sweet, juicy and exotic profile.

Alphonso mango, the sweetest and most fragrant variety, gives an intense, juicy sorbet; vegan, it works on a water or milk base.

Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.

Features: vegan, dairy-free, gluten-free, Halal certified, Kosher certified.

Directions: add the paste to the base, mix well and batch-freeze.

Dosage: 65 - 80 g per kg of mix.
