Cherry Gelato Paste Rubicone is a concentrated fruit paste for artisan gelato with an intense and natural cherry taste, with a sweet, juicy and delicately tangy profile.

Cherry gives a red, sweet, slightly tangy sorbet; it pairs with dark chocolate and almond.

Ideal for: fruit gelato and sorbets in the display, sundaes and semifreddi, in gelato shops and pastry labs.

Features: vegan, dairy-free, gluten-free, Halal certified, Kosher certified.

Directions: add the paste to the base, mix well and batch-freeze.

Dosage: 65 g per kg of mix.
