Apricot Gelato Paste Rubicone is a concentrated fruit paste for artisan gelato with a natural apricot taste, with a sweet, velvety and lightly tangy profile.

Apricot gives a sweet, velvety orange sorbet; it pairs with almond, vanilla and ricotta. It is ideal for creamy artisan gelato and desserts with a pleasant finish.

Ideal for: fruit gelato and sorbets in the display, sundaes and semifreddi, in gelato shops and pastry labs.

Features: vegan, dairy-free, gluten-free, Kosher certified.

Directions: add the paste to the base, mix well and batch-freeze.

Dosage: 65 g per kg of mix.
