Zabaglione Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with the taste of traditional zabaglione, with a rich and velvety profile, with egg and a liqueur note.
Egg and Marsala give traditional zabaglione, rich and velvety; it pairs with dry biscuits and dark chocolate.
Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.
Features: gluten-free, Kosher certified.
Directions: add the paste to the base, mix well and batch-freeze.
Dosage: 65 g per kg of mix.
