Cocoa Cream Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with a cocoa cream taste, with an intense, creamy and deeply aromatic profile, with roasted cocoa notes.

This is the extra cocoa cream for the display case's chocolate flavour: it gives a dark colour and deep taste, and also works on water-based mixes for a dairy-free chocolate.

Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.

Directions: add the paste to the base, mix well and batch-freeze.
