Shortbread biscuit gives a buttery, fragrant gelato at just 30 g per kg; vegan, it is finished with crumbled biscuits.

Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.

Directions: add the paste to the base, mix well and batch-freeze.
