It is reminiscent of a praline; finish it with grated coconut or chopped almonds. It is suited to the cold process.
Ideal for: indulgent display flavours and coconut sundaes.
Recommended pairings: coconut variegate, white chocolate and almond crumble.

Directions: add the paste to the white base, mix well and batch-freeze.
Dosage: 80 g per kg of mix.
