Aymara Raw Modica Chocolate Base is a complete powder base for artisan dark chocolate gelato with Modica PGI chocolate, for its typical raw texture.
It recalls the rough, grainy texture of Modica chocolate. It is vegan and gluten-free.
Ideal for: Modica chocolate, Sicilian flavours and vegan menus.
Features: gluten-free, vegan, no hydrogenated fats.
Directions: dissolve the base in boiling water with a stick blender, allow to cool and batch-freeze.
Dosage: 1.8 kg of product + 2.2 L of boiling water.
Processing: hot.
