Pure Milk 100 Rubicone is a high-quality milk powder base for artisan gelato, formulated with no artificial ingredients and no additives.

No emulsifiers: milk proteins bind the mix, with vegetable fibres and cream powder, for a creamy, digestible gelato.

Ideal for: cream gelato and fior di latte to customise in the gelato lab.

Features: gluten-free, Halal certified, Kosher certified.

Directions: dissolve base and sugar in the milk, pasteurise and batch-freeze.

Dosage: 100 g of base and 250 g of sugar with 50 g of cream per 1 L of milk.

Processing: hot.
